fran’s pasta
a nice arabiatta-style bacon and tomato sauce
250g spaghetti
an onion, thinly sliced
a chilli (red, fresh) seeded and chopped
100g diced bacon / pancetta / ham, etc
500g tomatoes, seeded peeled and diced
olive oil, herbs, garlic, salt, pepper
(optional) soy sauce, worcestershire sauce, sugar, salt
brush a large saucepan with olive oil, add meat and cook on low low heat until fat runs (10 mins). add onion, cook until lightly browned (10 mins)
add tomatoes, chilli, herbs. cover and cook over low heat for 40 minutes. stir to prevent sticking
optionally, cook with a dash of soy sauce, a dash of worcestershire sauce, a pinch of sugar and a smaller pinch of salt
cook spaghetti and drain. when sauce is ready, toss through
