carrot cake muffins

muffins

4 carrots, grated
1½ cups milk
¼ cup orange juice
2 eggs, beaten
2 cups flour, sifted
2 cups cornflour, sifted
3 tsp baking powder
3 tbsp sugar
1 tsp salt
4 tbsp butter, melted

preheat oven to 160°C. combine carrot, milk, OJ, eggs

in a separate bowl, combine flour, baking powder, cornflour, sugar, salt

stir together, slowly adding one to the other, then add butter

pour into greased muffin trays and bake 25-30 minutes

icing

4oz (115g) cream cheese
250g icing sugar
3 tbsp butter, melted
1 tsp vanilla essence

sift icing sugar onto cream cheese, add butter and vanilla

cook until thick and spreadable (not runny), then chill

coat muffins when icing is cold but not hard
